The "Effective String Theory" (EST) approach has proven to be a powerful tool for study non-perturbative behaviors in confining gauge theories. At its core it involves describing the flux tube between charged sources in terms of an effective bosonic string theory. This allows for the description of interesting physical observables, for example the inter-quark potential, in terms of meaningful parameters such as the "string tension".

The seminal works in which EST predictions are compared to lattice results date back to the 1980s. Recently, new interesting theoretical results have increased the predictive power of this approach especially for 2+1 dimensional gauge theories. Additionally, a novel bootstrap approach has been developed to further constrain the EST.

After reviewing some fundamental results in the field, this talk aims to explain some recent results obtained for 2+1 dimensional gauge theories. In this context, it will be highlighted how possible ESTs differ from the standard Nambu-Goto theory and what effect these differences have on the observables of the gauge theory. It will be shown how the parameters that characterize a particular EST can be extracted from precise numerical lattice simulations of the gauge theory.
